While most hotel pans are made of stainless steel, the thickness of the steel varies. The higher the number of the gauge, the thinner the stainless steel. Stainless steel steam pans range from 18 to 25 gauge, with 18 being the thickest and 25 being the thinnest. Thicker-gauged stainless steel pans tend to last longer than thinner pans and typically perform better in high-volume establishments. Thicker steam pans also conduct and retain heat better while more evenly distributing temperatures.
