Roll top chafers have a semi-removable top that can protect food from contaminants and help keep it warm over the course of serving, while remaining easily removable when food is served. Instead of being two separate pieces, as chafers with lids are, these roll top chafing dishes feature lids that slide backwards and out of the way while remaining attached to their chafers. This eliminates the possibility of the lid being lost or placed somewhere unsanitary before being returned to the chafer. Roll top chafing dishes can utilize either concentrated chafer fuel or electricity to keep food hot over the course of service. Some options even have the capacity to use electricity or chafer fuel depending on where you use them. The main drawback of electric roll top chafers is you'll have to be near an appropriate outlet to utilize it. This is usually cheaper than chafer fuel, though.
