Drop-in Sinks: What You Need to Know
Whether you need to add a handwashing station to your bar or turn an existing back-of-house surface in your steakhouse into a full food prep station, stainless steel undermount sinks and stainless steel drop-in utility sinks are a viable solution. For prep stations, operators can choose to include a sink designed for use with a garbage disposal.
These sinks include rectangular, square, or circular bowls with drain cutouts and are available with one, two, or three compartments. Sizes vary, but a typical rectangular drop-in sink is between 6 and 36 inches long and wide. Circular sinks have diameters as wide as 18 inches. Depths range from a few inches to 12 inches or more.
Commercial drop-in sinks with multiple compartments may also include cutouts for more than one faucet. Specialty options include built-in paper towel dispensers on sinks that drop into three-sided cutouts, and a commercial drop-in sink with an ice bin built in next to it.

What is the difference between a drop-in sink and an undermount sink?
Drop-in sinks mount into a cutout from above. They include a rim that sits over the counter and typically have faucet holes. They may include backsplashes or side splashes. Undermount sinks may include a rim, but it'll be hidden beneath the counter; holes for the faucet must be cut out of the counter.
Drop-in sinks are easier to install, but undermount sinks also offer a convenient option that's easy to clean and works well for prep stations or garbage disposal because of the ability to slide scraps into them directly off the counter.
How are drop-in sinks installed?
Drop-in sinks simply drop into a cutout for easy installation. The rim on circular and rectangular drop-in sinks extends over the edge of the cutout, and water-resistant caulking holds it in place, not the counter or work surface.
How are undermount sinks attached?
Commercial undermount sinks are attached in a similar way to a drop-in sink, using a silicone epoxy or other adhesive. Unlike drop-in sinks that adhere to the counter from above as they sit in a compartment, undermount sinks must be supported as the sealant dries. Alternatively, an undermount sink may be attached with clips or brackets.
Can you wash your hands in a three-compartment sink?
In the United States, the FDA prohibits handwashing in food prep sinks, service sinks, and warewashing sinks. Operations should provide their employees with dedicated sinks that are intended only for handwashing. Operators can create a handwashing station by installing a drop-in or undermount sink with a single compartment into an existing surface.
