Commercial cake pans are available in many of the same sizes and shapes as those used at home with one crucial difference: They're designed to withstand heavy-duty use in professional bakeries. Like other types of bakeware, bakery cake pans are most often made of aluminum or stainless steel, and they may be sold individually, in packs or sets of multiples of two, or in bulk (most often priced by the dozen) for high-volume operations.

What cake pans do professional bakers use?

  • Layer cake pans may also be called round cake pans. These are the traditional pans used for round cakes, whether they're a single layer or stacked together to make a cake that's several layers tall. These can range between 6 and 16 inches in diameter. You'll also find options with depths ranging from 1 to 3 inches, giving your chefs flexibility in what they're baking.
  • Square cake pans and rectangular cake pans bake batter into non-circular shapes, giving chefs the opportunity to create layer cakes in those designs without baking a round cake and then trimming it down. These bakery cake pans are used for the same kinds of cakes as their circular equivalents.
  • Springform pans have removable sides that are unclasped after the cake is finished baking so the springform band can be lifted away without damaging the product. Although these are used with many types of delicate cakes, they're often called cheesecake pans.
  • Cake pans with removable bottoms have a bottom component that can be separated from the sides. However, the sides are one complete section that does not "unclasp" like a springform pan; instead, the removable bottom is pushed up through the top of the pan.
