Professional chef knives are staples in virtually any foodservice operation. Although specialized knives exist for specific tasks, commercial chef's knives are designed for versatility, easily completing general cuttings tasks while serving to accomplish more specialized tasks in a pinch. A commercial chef's knife is ideal for basic food prep tasks such as slicing onions, mincing herbs, and chopping vegetables. These blades can be utilitarian and economically priced or luxurious and high-end depending on the needs of your operation.

Almost any restaurant chef knife will have the same basic straight-bladed shape, but various lengths are available between about 6 and 12 inches. Blades can be either forged or stamped and are typically between 2 and 3 inches wide. Handle materials can be made of everything from nylon and plastic to high-end woods. Most chef's knives should be cleaned by hand to maintain their sharpness, as commercial dishwashers can dull and damage the blades.
