The unit's heater is designed to warm the food without drying it out, at temperatures between 140 and 180 degrees Fahrenheit. Operators can adjust the level with the microprocessor and monitor it on the temperature display. The top-mounted vent regulates the humidity by expelling moisture when necessary.

This Traulsen G24310 full-height mobile heated cabinet has six shelves and a Load-Sure Guard that ensures product is loaded correctly without blocking the flow of heat. As users load the cabinet, the full-height doors stay open at 120 degrees for convenience. At a lesser angle, the doors self-close to keep heat inside the unit. Foamed-in-place insulation in the cabinet retains heat to maintain the set temperature.
