Southbend BGLM-40 Description
The Southbend BGLM-40 tilting braising pan can hold 40 gallons, so it is ideal for cooking in high-volume applications. Tilt skillets can be used for most cooking tasks, from braising and simmering to steaming and pan frying. Made of clad stainless steel and 5⁄8 inch thick, the cooking plate is durable and provides even heat distribution. In the stainless steel pan, the corners are coved to eliminate crevices that could trap debris.
The pan tilts with a manual hand crank, which is jerkier while tilting the pan, though it is more affordable than electric models. Cooked product flows toward the front pour spout since the pan is sloped in that direction, and a pour strainer is included so operators can separate solids from liquids.
Controls on this Southbend BGLM-40 manual tilt skillet ease use, with a thermostat that adjusts the temperature from 100 to 450 degrees Fahrenheit. If temperatures exceeds this level, the burners shut off to prevent overheating and shut off if the pan is tilted past 5 degrees. Because the exterior is made of stainless steel, it resists dents, scratches, and rust. Front and rear feet are adjustable, so they stabilize on uneven floors, and the rear feet are flanged so they can be secured to the floor.
