Vulcan 48S-4B24G Description
So operators can fry, boil, simmer, bake, and roast ingredients with one unit, the Vulcan 48S-4B24G NG restaurant range is built with four burners, a 36-inch-wide griddle, and a standard oven. This 48-inch-wide by 34-inch-deep by 58-inch-tall unit is made of stainless steel—a rugged, rust- and corrosion-resistant metal that's durable enough to survive daily use in fast-paced restaurants. For extra strength, its chassis is fully welded. This unit features a lift-off high shelf above the range for convenient storage, and to reduce the risk of rocking during operation, it's positioned on four 6-inch stainless steel legs that can be raised or lowered.
The oven base's 27-inch depth accommodates full-size pans inserted side to side or front to back for flexibility. The two included oven racks feature rack guide sets that enable placement in four positions. Staff members can simply open the hinged oven door to access the interior, and to reduce injury risk, its handle remains cool to the touch. The interior temperature can be set between 250 and 500 degrees Fahrenheit for broiling, roasting, or baking needs, and to withstand long-term exposure to high heat and simplify cleaning, its door panel and base are made of porcelain.
The Vulcan 48S-4B24G NG Endurance™ range's 48-inch-wide cooktop features four open-top burners on the left and a 24-inch-wide griddle on the right. Two shrouded flashtube pilot systems control the four burners to save gas; each burner has a corresponding cast grate and integrated aeration bowl for efficient heat conduction. While the front grates are sized for small or medium cookware, the rear grates are ideal for large stockpots and saucepans. So operators can safely adjust temperature during operation, the burner knobs remain cool to the touch.
The 3⁄4-inch-thick griddle plate warms evenly and retains heat to reduce lag times when reheating is required for consecutive use. While the backriser and two side splash guards protect the burners and nearby surfaces from hot, popping oil, the manual controls ease operation. Operators can remove food residue and grease from the extra-deep crumb tray and 4-inch-wide grease trough.
