Vollrath 77754 Description
The Vollrath 77754 Tribute® pan has a 10 1⁄11-quart capacity and curved sides for wok applications and stir-frying. Its flat bottom ensures stabilization on the cook surface. Made of aluminum, the core evenly distributes heat across the bottom and sides, while the stainless steel interior and exterior provide strength and rust resistance. As the pan heats up, the handle remains cool to the touch to protect the operator from burns.

WAY too heavy for my personal use
This wok is REALLY heavy...too heavy for me to deal with in my personal kitchen (I'm a middle-aged woman). I will not be keeping it. Nice quality, though, very solid Wish there was a handle on the other side to make it easier to lift. Even my husband was surprised at how heavy it was. I used it once and it cooked my stir-fried vegetable nicely. I'm sure it would work great in a professional kitchen when used by a strong chef. ;) When washing it, I could barely lift it out of the sink when it was full of water. Make sure when you get it to clean the inside thoroughly with soap and water and wipe the inside several times. Mine had a black residue (like ground-in powder) that didn't come off until I scrubbed the inside several times with moist paper towels after washing. Made in China. Has the NSF stamp of approval.
Works Great
Great for sauces. The extra size helps keep the stove clean. Could use a handle on the other side. I'm glad I have a big sink.
Excellent Quality - Definitely recommend
The semi flat bottom allows me to use it on both, my wok burner, and regular stove top. The try ply makes it even heating like my aluminum wok. Doesn't burn food like my plain stainless wok.
Tough and Utilitarian
My wife likes to "cook for an army," so I got her this pan to replace a Calphalon 14" nonstick flat-bottom stir fry. Under heavy use, the nonstick on the Calphalon just disappeared. The Vollrath pan has no nonstick which I see as a plus since metal utensils can be used with impunity. Another plus is that the Vollrath pan has more than twice the useable volume of the Calphalon piece. The price I paid for the two pans is about the same, but I consider the Vollrath a better value because of its even heating 3 ply metal and its robust construction. The Vollrath pan is meant for continuous use in a busy commercial kitchen. I imagine you could pound nails with it, use it as a pry bar, and drop it out of a helicopter with no ill effects. It's a big pan that's not overly heavy, but a small helper handle opposite the main handle would have been helpful. That's the only con; we expect to keep this pan in our home kitchen forever.
