The Doyon JA8 Jet-Air convection oven holds as many as eight 18-inch by 26-inch pans, and its illuminated interior provides content visibility. The oven's interior and exterior are made of stainless steel to ensure durability and simple cleaning. It is completely insulated and sealed to trap heat in the cabinet. The thermal glass doors reflect heat, further insulating the cooking cabinet.

The Doyon JA8 Jet-Air convection oven has a reversing fan to cook items evenly and quickly. The steam shot and pulse injection system can add steam in single bursts or continuously. There are 99 programmable settings used to bake common items and a mode for manual cooking. The oven takes 15 minutes to preheat and can reach temperatures of 500 degrees Fahrenheit using its digital controls. Cooking times can be monitored with the oven's digital timer.
