The Doyon JA8 Jet-Air convection oven uses its reversing, two-speed fan to heat items evenly and quickly without removing and rotating them. Steam can be added continuously or in individual bursts using the steam shot and pulse injection system. It has 99 customizable EBake settings for preparing common items and a manual cook mode. Temperatures as high as 500 degrees Fahrenheit can be adjusted via the digital controls and preheating finishes within 15 minutes.

As many as eight 18-inch by 26-inch pans can fit in the Doyon JA8 Jet-Air convection oven. The interior is illuminated, giving the operator full view of the contents. Its stainless steel construction makes the oven tough, corrosion resistant, and swift to clean. For greater heating efficiency, the oven is fully sealed and insulated, while the thermal glass doors are heat reflective to provide insulation. When the door is ajar, a switch turns off the fan.
