The Metro C585-SFS-UPFC C5™ 8 series controlled temperature holding cabinet's ducted heating system produces temperatures between 70 and 200 degrees Fahrenheit to accommodate various prepared foods. This mechanism recovers lost temperatures quickly, so it's ideal for consecutive uses. To preserve temperatures, the cabinet's interior is lined with 2 1⁄2-inch-thick, high-density fiberglass insulation, while a low-temperature alarm alerts the operator to unexpected drops. The solid-state controller uses continuous closed-loop monitoring for precise temperature measurements, which are displayed digitally on the top-mounted controls. Operators can adjust temperatures and recall past menu item settings with these controls, as well.

The Metro C585-SFS-UPFC holding cabinet's pass-thru layout grants access to the cabinet's front and back, so operators can load and remove pans from either side. The front door's solid, insulated stainless steel construction helps retain temperatures, while the clear tempered glass back door enables users to see stored items. Universal wire slides built into the cabinet accommodate (16) 12-inch by 20-inch by 2 1⁄2-inch steam pans or (8) 18-inch by 26-inch sheet pans; as inventory changes, operators can raise or lower these slides by 1 1⁄2 inches. Designed for longevity, the cabinet's interior is made of polished 20-gauge stainless steel, while the interior is made of 22-gauge stainless steel—both of which resist corrosion and rust. This half-height unit is mounted on 5-inch casters.
