Metro C515-PFC-4 Description
The Metro C515-PFC-4 C5™ 1 Series non-insulated mobile proofing cabinet is a half-height unit that can accommodate eight 18-inch by 26-inch pans or (16) 12-inch by 20-inch pans of food. Its fixed wire slides are mounted on 3-inch centers, enabling it to fit food pans as deep as 3 inches. To help users monitor dough as it proofs, the cabinet's door is made of clear polycarbonate, and its high-strength magnetic latches secure the door closed to prevent air from escaping during the proofing process.
Users can adjust the heat and humidity settings of the Metro C515-PFC-4 half-height uninsulated mobile proofing cabinet using the recessed analog controls and monitor the changes via the digital display. To support future upgrades and repairs, the unit's control module is removable, and it's bottom mounted to avoid overheating. Mounted on durable hinges with nylon bearings, the cabinet's doors can open to 180 degrees, enabling users to comfortably load and unload pans laden with dough. Resting on neoprene casters, this cabinet facilitates mobile applications.
