Vollrath 40728 Description
The Vollrath 40728 gas charbroiler has an 11 11⁄16-inch by 19-inch cooking surface, and providing even heat distribution and quick temperature recovery, this area is heated by one stainless steel burner. Heat from the burner is absorbed and directed to the grill plates by radiants or lava rocks, both of which are included with the unit. While lava rocks impart more flavors and aromas, radiants are easier to maintain.
Because the grill plates are two sided, they can be flipped to support different applications. One side has narrow channels that reduce smoke and flames by dispensing excess fat, and the opposite side has wider spacing for delicate items such as fish. To lower the heat level and slow cooking, the grill plates can be placed at an angle.
This Vollrath 40728 commercial charbroiler has side and back splashes that catch splatter and debris, keeping the area around the unit clean. To reduce the risk of burns, the bull-nose design on the front creates separation between the operator and broiling area. Made of stainless and aluminized steel, the unit is fully welded to eliminate crevices that could trap grease and food particles. Gas powered, the unit ships ready for natural gas and comes with a conversion kit and regulator for LP gas.
