Dexter Russell 40D-14W-PCP Carving Knife
I've cut meat since I was 15, I'm now 63. This is the best slicing knife, bar none, that I have ever used. Holds a good edge, sharpens quickly, and is very comfortable in the hand. It almost does its own slicing, it's that good. I highly recommend this knife.
