The Dexter 1237-12 07201 butcher steel’s medium coarseness and heavy weight design are ideal for straightening the edge on blades. With the high carbon molybdenum German stainless steel construction, the steel is durable for high-volume applications. The blade is magnetized, preventing carbon dust from escaping into food preparation areas. The butcher steel has a triangular finger guard to keep users' hands safe while honing.

I would buy this product again
An awesome steel should last for generations but what is with the packaging it came in? A square giant box with a huge amount of paper to keep it from falling around, I guess in transit but it still managed to poke out of the box about three inches. I'm glad it wasn't damaged. Thanks anyway though, we are really happy with the product.
