Slicers are available in both manual and automatic varieties. With the manual slicer, an operator must move the food back and forth consistently to produce the desired product. However, if manual slicing becomes necessary, the automatic models can be switched to this function. Most automatic slicers have one slicing speed; however there are a few models with up to three speeds. The 9 inch blade automatic slicers feature a 1/4 – 1/5 HP motor. These slicers have a cutting capacity range from 7 1/8" W x 6"H x 6" diameter up to 8"W x 6"H x 6 ½" diameter. 9-inch blade slicers are recommended for light-medium duty use, light sandwich preparation, and small restaurants. Cheese should not be cut with a 9-inch slicer.
The 10-inch blade slicers have a motor size from 1/3 -1/4 HP. The cutting capacity on these slicers range from 7 1/2"W x 6"H x 7" diameter up to 9"W x 6 ½"H. The 10-inch blade slicer is recommended for light-medium duty use, light sandwich preparation, and small restaurants. Light cheese, meat, and vegetable cutting is recommended for this slicer.
The 12 – 14-inch blade slicers feature motors that range in horsepower from 1/4 - 1/2 HP. The cutting capacity ranges from 7 ¾"W x 5"H x 8" diameter to 9"W x 6 ½" H. These slicers are recommended for medium-heavy duty use. Medium use for cheese, meat, and vegetable cutting is recommended.
Another key feature to consider when purchasing a slicer is the size of the carriage, or where the sliced product is held. Standard slicers can hold products ranging from 7" to 12" in diameter. If your food service business allows products to self-feed off the carriage, you should consider a slicer with an angled carriage.When operating a slicer, safety and cleanliness are two of the foremost concerns.
