Griddles are flat pieces of cooking equipment frequently used in commercial kitchens. Griddles are ideal for cooking because they maintain an even heat, creating a better tasting, more appealing and uniformly cooked product. These appliances can be used for cooking fried items such as pancakes, grilled cheese sandwiches, unleavened breads, vegetables and meats. These multi-functional units are capable of keeping soups and sauces warm and can quickly warm up prepared foods. Types of Griddles

Commercial griddles are ideal cooking appliances for most foodservice businesses and can be broken down into two separate categories. Heavy duty and medium duty griddles are available. Heavy duty griddles are best suited for kitchens where the griddle will be the main piece of cooking equipment used. Heavy duty griddles can be used every day and are built to withstand repeated use, which means they will not wear out as frequently as other types of commercial griddles.

Medium duty griddles are used frequently in smaller businesses or areas where the griddle does not have to be used every day. Medium duty griddles are not designed for repeated frequent use and will wear out quickly if used for more than the recommended amount of time.

Griddle Widths

Griddles come in a variety of widths to make placing them in your commercial kitchen easier, regardless of the amount of space you have available. Larger businesses typically have more space and need larger griddles to meet the demands of their business, while smaller businesses usually have a more limited area to work with and need a smaller griddle.

Heavy duty griddles can be purchased in seven different widths, allowing you to make the perfect choice for your business. These griddles are available in 12", 18", 24", 36", 48", 60", or 72" varieites.

Medium duty griddles have four width options to choose from, either 15", 24", 36", or 48".

Commercial Griddle Heat Sources

Commercial griddles have two different heat sources that provide slight variations in flavor and cooking times of the food product. Griddles can be purchased in either gas or electric heated varieties. Gas griddles connect their heat source, gas, to a valve regulator via the main hose. These regulators are controlled by knobs that allow you to determine how much gas is allowed through to the burner. Each burner has a series of tiny holes that allow the gas to exit through, thus cooking the product to the desired temperature.

Electric heated griddles have a heating element either embedded within the cooking surface or directly below it. Electric griddles offer a slightly slower start up time than gas heated units, but offer great consistency.

Control Options for Griddles

Griddles are available with three different types of controls to choose from. You can purchase a commercial griddle with either manual, throttling thermostat, or snap action thermostat controls. Manual controls should be manually set to control the height of the flames. You can gauge the necessary setting based on experience of cooking .

Throttling thermostatic controls allow you to set the temperature to the appropriate degree and the unit will steadily hold this temperature until you change the temperature.

Snap action thermostatic controls are slightly more expensive control options. These type of thermostatic controls are highly accurate, which provides high quality, evenly cooked products.

Specialty Options for Griddles

Griddles can be purchased with three specialty options, drop in, portable, and add on varieties. Drop in griddles can be used with an existing griddle structure and are simply "dropped in" as the name suggests. Drop in units come in widths of either 36", 48", or 60" and are great for all of your griddle needs.

Portable griddles are usually smaller and are easy to move from one area to another. Portable griddles are perfect for concession stand type businesses or any foodservice business that needs the ability to move quickly.

Add on griddle tops are designed to cover the burners on a griddle. KaTom offers grill tops to cover either 2 or 4 burners or surfaces of 11"x 23" or 23" x 23", respectively. These units also have a removable grease drawer.

Griddle Cooking Surfaces

Commercial griddles have either steel or chromium cooking surfaces. Both stainless steel and chromium cooking surfaces are easy to clean and maintain, while stainless steel tends to offer more resistance to scratches and dents. Chromium offers a great deal of corrosion resistance and has a shiny appearance.

Griddle BTUs

Griddles have varying BTUs, or British Thermal Units, based on the size and type of griddle purchased. Heavy duty griddles have BTU ranges from 20,000-180,000. Medium duty griddles have BTUs ranging from 20,000-113,200.
