Update APP-1236 Description
Designed to be used with deck ovens, the Update APP-1236 pizza peel has a 36-inch overall length and 12-inch by 14-inch blade. Because this blade is made of aluminum, it's easier to clean than wood options, and its thinner design easily slides under cooked pizzas and breads. Raw dough is more likely to stick to metal than wood, so operators often keep a wood peel for putting pizzas in the oven and a metal peel for removing them. If this peel is used with uncooked pizzas, it'll need to be used with flour, cornmeal, or another release agent. The handle is made of wood, so it stays cooler to the touch than the blade, providing a safe place for users to grip.
