High-volume steamers use convection heating to evenly cook large batches of food. Many models hold full-size steam table pans.


Commercial kitchen steamers, which are available in configurations for small portions and high-volume use, have one to four compartments. Most can hold between one and nine pans, though larger models can accommodate more than ten full-size pans. These industrial food steamers may be boiler based, boilerless, or have an external steam source to heat food. Boiler-based steamers use plumbed water to heat food, while boilerless restaurant steamers create steam from a water reservoir.

Gas, electric, direct-steam, and steam-coil heating are all commonly used to power commercial food steamers. Gas steamers heat food quickly but may not be an option if your establishment does not have gas utilities readily available, but electric commercial steamers must have a designated outlet that supplies the required voltage.
