From restaurants and cafes to community centers and cafeterias, commercial dishwashers are an essential piece of equipment in every foodservice business. There are several types of commercial dishwasher for sale, each with its own benefits and considerations. Smaller venues may opt for a restaurant dishwasher that can be installed under an existing countertop because they need a more compact configuration with a lower capacity than other restaurants. Establishments with bar service may benefit from adding a glass washer, as they can quickly sanitize glassware at the bar so bartenders don't have to leave their workstation any more than necessary.

However, busy kitchens need a restaurant-grade dishwasher that can wash high volumes of dinnerware in a short period to keep up with mealtime rushes. Conveyor dishwashers have the highest hourly capacities, though they are usually larger and require more space in a floorplan. Door-type dishwashers are a more compact option for high-traffic operations. In addition to these different configurations, commercial dishwashers may clean items with high temperatures – known as high-temp units – or with chemicals in low-temp units.

Operators should also consider whether they need dishroom equipment and supplies. Depending on the unit, booster heaters, dishwashing chemicals, and additional accessories may need to be purchased for the dishwasher to operate properly. Other supplies – such as glass brushes, carts, and dish dispensers – can help employees accurately follow dishwashing procedures.
