Oyster knives have thick handles capable of withstanding the pressure needed to pry open oysters. The blades of oyster shuckers tend to be shorter and wider than most knives and often feature unique tips designed to slide into the mollusk's hinge without stabbing the meat inside. Several blade styles are available:

  • New Haven-style blades are shorter, wider, and feature an upward curve designed to wedge into the oyster's hinge for easy shucking.
  • Boston knives have long, narrow blades with round tips designed to shuck from the side of oysters. These blades are usually around 3 to 4 inches long.
  • French-style oyster knives are ideal for small oysters because of their short blades. Most of these shuckers feature a handguard as well.
  • Providence oyster knives, like Boston knives, are good for opening oysters from the side as they feature short, wide blades.
  • Galveston knives are best for medium and large oysters and have long, wide blades with rounded tips.

Many brands offer restaurant oyster shuckers and knives. Handles are available in utilitarian plastic and rubber, as well as traditional wood. Many feature ergonomic and nonslip grips for additional control. Blades are primarily made of carbon steel, though stainless steel models are available as well.
