Commercial Convection Ovens
Commercial convection ovens use fans to evenly circulate hot air, preventing hot or cold spots that cause over or undercooked food. These ovens are great for baking and roasting meats, potatoes, breads, desserts, and various other foods.
When purchasing a convection oven, commercial restaurant operators should consider the utilities available to them to determine if gas or electric models best fit their needs. Gas ovens are powered by LP or natural gas, although some gas-powered ovens may be convertible, meaning operators can change from one type of gas to the other before using their commercial convection oven. Both gas and electric ovens require an electrical outlet, as electricity powers the lights and fans in all restaurant convection ovens.
Most industrial convection ovens are NSF certified – which guarantees the product has been tested to meet specific standards for health and sanitation – but another specialty rating to consider is the ENERGY STAR certification. Choosing an oven with this rating can help lower the cost of utilities over the life of the unit, potentially making up for what may be a higher initial cost.
