Why would I need a compartmentalized bus box?

Having a compartmentalized tub enables staff to separate utensils, flatware, and disposables as the tub is loaded. Depending on the establishment's practices, this can save time by having bussers sort utensils while cleaning tables, where the flatware is not already lumped together. Restaurants with busy kitchens may benefit from sorting at the table rather than sorting in the kitchen since space is already limited. On the other hand, if space is more valuable in your crowded dining area, then having a single compartment tub that is sorted in the back might alleviate some congestion. Consider your establishment's bussing and sorting procedures to determine whether bus tubs with compartments would be beneficial. The time saved with each table may be small, but on a busy night, these small differences add up quickly.

What size bus pan do I need?

Large restaurant bus tubs might seem like an obvious choice at first glance, but having a tub that is larger than needed could make the process difficult for your staff. Consider how many tables you expect to clean at one time, how many diners might be using those tables, and the amount of dishware that might need to be bussed per person. Use a tub large enough that the busser is not required to make more than one trip, as foot traffic is always at a premium in dining areas. However, a small tub is easier to carry, generates less noise as it's filled, and takes up less aisle space between the kitchen and table. Large tubs can create traffic jams in the dining space as the busser tries to squeeze through cramped quarters, and extra space gives flatware room to rattle and for sounds to echo. Ensure that staff can comfortably handle whichever pans you purchase and that the tubs can fit through your walkways.

Can I use bus pans to presoak flatware?

Many establishments use the pans to presoak their flatware before beginning more thorough cleaning processes. Soaking loosens tough debris so that the flatware only needs one trip through the dishwasher. However, leaving them to soak requires a suitable place to set the pan, which is not available in every kitchen. Consider which dishes you use that are particularly difficult to clean and consolidate them in a single tub. Or, if you have plenty of extra room, you could implement presoaking as a standard practice after bussing. If you have some dishes that should not be soaked, consider compartmentalized tubs to keep delicate dishes separate.

What other considerations should I make before purchasing bus tubs?

Some tubs double as storage totes when not in use for clearing tables. If you plan on storing equipment in tubs, purchase ones with lids.
