Zucchini Fries Recipe

  • 1 pound of zucchini
  • 3/4 cup flour
  • 2 eggs, lightly beaten
  • 1 1/2 cups Panko bread crumbs
  • salt and pepper to taste


Cut the zucchini into long strips using a sharp knife. Set up a dipping station with 3 bowls: for flour, beaten eggs, and panko bread crumbs. Lightly coat the zucchini strips in flour. Next, dip the strips into the egg. Lastly, roll the zucchini strips in the Panko bread crumbs. Bake at 400 degrees F on a sheet pan and a cooling rack for about 15 minutes. Flip the zucchini strips and cook another 15 minutes or until golden.
