Pineapple Fried Rice Recipe
- 1 tbsp. of sesame oil
- Cooking oil (your choice)
- 4 cups of day old cooked rice, Jasmine or white
- 1/3 pineapple, chopped into small pieces
- 1/3 cup cashews, chopped
- 1 stalk of lemon grass OR zest from half a lemon
- 1 egg
- Soy sauce
- 2 whole scallions, chopped
- Dash of coriander
- 2 garlic cloves, finely chopped
- 1 small wedge of ginger
- A dash of Sriracha Chili Sauce
*This pineapple fried rice recipe requires day old rice, because it has less moisture than regular rice and will crisp up like hibachi style rice.
Add cooking oil to a wok that is set over medium-high heat. Stir in the garlic and ginger as well as add the lemon grass stalk/lemon zest. Add a dash of soy sauce to this mixture for taste.
Break up the clumps of rice as you stir it in. Once everything is combined in the wok and the rice is heated up add a dash of Sriracha. Next make a hole to the bottom of the wok in the middle of the rice. Reduce the heat to medium and crack the egg into the hole. Make sure to stir the egg so that it is slightly scrambled. Once the egg is halfway cooked begin mixing the rice in with it until the egg is evenly distributed throughout the rice.
Stir the pineapple, chopped scallions, dash of coriander, and cashews into the rice. If you used lemongrass, remove it. Add about a tablespoon of the sesame oil to the rice and mix well. Serve immediately and garnish with scallions.
