Orange Fortune Cookies Recipe
- 2 egg whites
- 1/2 cup all purpose flour, sifted
- 1/2 cup white sugar
- 2 tbsp water
- 1 tsp. orange (or whatever your choice) emulsion/flavoring
- 1 tsp. vanilla
- Food coloring (optional)
Pre-heat the oven to 400 degrees F. Meanwhile, beat the egg whites until they are frothy and nearly able to form soft peaks. Mix in the flour. Once the flour has been mixed in, add the sugar, flavoring, food coloring, and vanilla. Add the water and stir. Your batter should now resemble thin pancake mix.
For baking, use a silicone baking mat. It is possible to use a regular baking sheet with either parchment or wax paper, but you cannot use any cooking spray or oils on the baking sheet because it makes the cookie batter spread out of shape.
Take about a tablespoon of the batter and in a circular motion spread the batter out on the mat, making a five inch circle for a standard fortune cookie size.
Bake for about five minutes, or until the edges are slightly browned. With the spatula, scoop up the cookie, flip it over onto a clean working surface, and place the slip of paper in the middle (for a personal touch, write out your own custom fortune messages for your friends or family).
The cookie is going to be very hot, so be careful. Fold the cookie like a taco around the fortune and bend the bottom of the cookie over a coffee mug to create that well known fortune cookie shape. Place the cookie into a muffin tin so it will retain its shape while working with the other cookies. By cooking two or three of these cookies at a time, you will have time to work with them before they get hard and crack.
