Sweet and Sour Pork - Recipe

For this sweet and sour pork recipe serves enough for 2 and is simple to make.

Ingredients

  • 1 cup long grain or basmati rice
  • 1/2 lb. pork tenderloin, preferably free-range or organic, cut into 3/4 in. cubes
  • 1 small red onion, diced
  • 1 red or yellow bell pepper (or 1/2 of each), diced
  • Thumb-sized piece of fresh root ginger, finely sliced
  • 2 cloves of garlic, finely sliced
  • 1 fresh red chile
  • Small bunch of fresh cilantro, chopped
  • Peanut or vegetable oil
  • 1 tsp. 5 spice powder
  • 1 tsp. cornstarch
  • 2 tbsp. soy sauce
  • (1) 8 oz. can of pineapple chunks
  • 2 tbsp. balsamic vinegar
  • 1 small heart of romaine or 1/2 a butterhead lettuce
  • 2 tsp. sesame seeds
  • Sea salt
  • Freshly ground black pepper

Directions

Bring a pan of salted water to a boil and add the rice. Cook the rice according to the package instructions and cover with aluminum foil. This will keep the rice warm until it is needed. Halve the pork tenderloin and cut into 3/4 inch cubes. Peel and halve the red onion, dicing it into 3/4 inch cubes. Halve the bell pepper and cut it into 3/4 inch cubes as well. Peel the garlic and ginger. Finely slice the chile, ginger, and garlic. Pick the cilantro leaves and put them to one side. Finely chop the cilantro stalks.

Preheat a wok (or large frying pan) on a high heat. Once it is hot add peanut oil and swirl it around. Add the pork and the 5 spice powder and toss or stir them around. Cook for a few minutes until browned then transfer to a bowl using a slotted spoon. Carefully give the wok or pan a quick wipe with a ball of paper towels and return to heat. When it is hot, add more peanut oil and all of the chopped ingredients. Stir everything together and cook for 2 minutes. Stir in the cornstarch and 2 tablespoons of soy sauce.

Let everything cook for 30-40 seconds, then add the pineapple chunks with their juice, the browned pork and the balsamic vinegar. Season with black pepper and a little more soy sauce, if needed. Break open a piece of pork, check that it is cooked through, and remove from heat. Reduce the sauce to a gravy-like consistency by cooking for a few minutes more.

Divide the rice and lettuce between 2 bowls or plates. Spoon the pork, veggies, and sauce over the top and sprinkle with the sesame seeds and reserved cilantro leaves.
