Hot Chorizo Hash
- 2 pounds of red potatoes, diced
- 1 sweet onion, diced
- 4 chorizo sausage links, casing removed
- 1/2 stick of butter
- 4 eggs
- shredded cheese, salsa, and sour cream for garnish
Heat a cast iron skillet over medium heat. Melt butter and add diced potatoes, chorizo, and onion to pan. Stir occasionally.
Continue stirring until potatoes are crisped but soft on the inside. Poach eggs, add salt and pepper to taste.
Plate potatoes and top with poached eggs. Garnish as desired.
