Mango-Pineapple Relish

Fruit salsa on fish
Ingredients

  • 1 mango, diced 1/2-inch
  • 1 pineapple, diced 1/2-inch
  • 1 jalapeƱo, minced
  • 1/2 red onion, thinly julienne
  • 1 yellow pepper, diced 1/2-inch
  • 1/4 cup olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon ground pepper
  • 1/4 cup apple cider vinegar

Directions

  • Combine all ingredients in a bowl and mix well. Let stand for a minimum of 20 minutes.
