Lemon Gem CookiesIngredients for Cookies

  • 3/4 cup butter, softened
  • 1/2 cup confectioner’s sugar
  • 1 tbsp. grated lemon peel
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 cup sprinkles

Ingredients for Lemon Icing

  • 2 tbsp. lemon juice
  • 1/2 tsp. grated lemon peel
  • 1 cup confectioner’s sugar


Cream softened butter with confectioner’s sugar until fluffy. Add 1 tablespoon of grated lemon peel to the creamed mixture until mixed in thoroughly.

In a separate bowl, mix the flour and cornstarch. Add a fourth of the flour/cornstarch mixture to the creamed mixture, mix throughly before adding more. Refrigerate the dough for 1 hour or until workable.

Shape the dough into a roll to desired thickness. Roll dough in the sprinkles until covered. Refrigerate the dough for at least 2 hours.

Slice into 1/4 inch thick slices and place them on an ungreased cookie sheet. Bake at 375 degrees F preheated oven for 9-11 minutes.

While cookies are baking, mix together a cup of confectioner’s sugar, lemon juice, and lemon peel. Before icing, make sure that the cookies are cool.
