- 2 c. cornmeal
- 1 c. all-purpose flour
- 3 tsp. baking powder
- 1 1/2 tsp. salt
- 1 1/2 c. milk
- 1/2 c. water
- 1 egg, beaten
- 1 c. chopped onion
1. Remove basket from fryer and heat oil to 375° F.
2. In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion.
3. Use a small ice cream scoop or teaspoon to carefully drop batter into preheated oil Cook 8 or 10 at a time for 5 minutes or until golden brown. Turn occasionally for even browning. Remove from oil with a wooden slotted spoon, and place on paper towels to drain.
