Steak Fajitas Recipe
Ingredients for the Marinade
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 2 tbsp. olive oil
- 1/2 jalapeño pepper, chopped with seeds and ribs removed
- Juice from 1 lime
Ingredients for the Fajitas
- 2 bell peppers, sliced into thin strips
- 1 yellow onion, sliced into strips
- 1 lb. flank steak (skirt or sirloin steak do alright as well)
- Warmed flour tortillas
- Your choice of toppings
Mix all marinade ingredients and coat steak with the marinade and let it sit at room temperature for an hour, or longer in the fridge. Before you cook the meat, wipe off most of the marinade and sprinkle the steak with salt.
Set a large cast iron pan or griddle over high heat and let heat for 1-2 minutes. Add oil to the pan and let heat up for 1 minute. Add steak frying on each side for 3 minutes (medium rare), or until desired. If your pan smokes too much, reduce to medium-high heat. Let sit for 5 minutes tented with foil.
Cook the vegetables when the meat is resting. Add a little more oil if needed. Cook for about a minute before stirring and then stir about every 90 seconds for 5-6 minutes total.
Slice meat into thin slices and serve immediately with toppings wrapped in a tortilla. Enjoy this steak fajitas recipe.
