Champagne Poached Pears Recipe

Poached Pears


  • 4 pears, peeled with stems remaining
  • 1 bottle of champagne
  • 1 lemon, zested
  • 1 orange, zested
  • 2 in. section of vanilla bean (or 2 tsp. vanilla extract)
  • 1 tsp. ground cinnamon
  • 1 cup sugar
  • 2 cups water


Add the champagne, both zests, the vanilla bean, cinnamon, sugar, and water to a pot over medium heat. Stir until the sugar is dissolved. Turn the heat up to medium-high and bring the pot’s contents to a boil. Reduce heat to simmer and add the pears to the liquid and cover with a lid or baking paper. Cook until tender.
