Banana Orange Muffins with Ginger Cream Frosting

Banana Orange Muffins - Recipe


  • 1 cup self-rising white flour
  • 2 cups Wheaties breakfast cereal
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1/2 cup natural raw sugar
  • 1 banana, pureed
  • 1 orange, juiced

Ginger Cream Frosting Ingredients

  • Fresh Ginger Root
  • 1/2 cup sugar
  • 1/4 cup salted butter
  • 1 orange, juiced
  • 3 tbsp freshly grated ginger
  • 1/4 cup cream with 1 tbsp flour whisked in


Heat oven to 375 degrees and oil a 24 cup mini muffin pan lightly with olive oil cooking spray. In a food processor, process Wheaties cereal until it they are coarsely ground. Next, put the banana, egg, and vanilla in food processor with the orange juice and puree. Set aside. Mix flour, Wheaties, and sugar in. Add the milk and banana mixture, and mix until combined.Fill each cup of the 3/4 of the way full and bake for approximately 12 minutes until cooked through and golden in color.

For the frosting, in a small saucepan over medium heat, melt butter and add sugar, ginger and orange juice. Stir continuously for 5-6 minutes or until sugar mixture begins to caramelize (gain caramel color). When sugar caramelizes add cream mixture and continue to heat and stir for 3-4 minutes or until frosting begins to thicken. Serve warm with muffins.
