Alice’s Oatmeal Cupcakes with Coconut Pecan Frosting

Alice's Oatmeal Cupcakes - Recipe

Ingredients

  • 1 Cup Quick Oatmeal
  • 1/2 Cup margarine
  • 1 1/4 cups boiling water
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/3 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg

Coconut Pecan Frosting Ingredients

  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 egg yolks
  • 1/2 cup margarine
  • 1 tsp vanilla
  • 1 1/3 cup coconut
  • 1 cup pecans, chopped

Directions

Combine oatmeal, margarine, and boiling water in the bowl of a KitchenAid stand mixer. Set aside to soak for 20 minutes.

Grease a 24 cup muffin pan. Preheat oven to 350 degrees.

Combine all remaining ingredients with oatmeal mixture and mix until well combined. Makes 24 delicious cupcakes

For the frosting, in a saucepan over medium heat, constantly mix sugar, egg yolks, margarine, and vanilla for about 12 minutes. Add in coconut and pecan, and stir until thick enough to spread on cooled cupcakes.
