Each kettle has a 2²/₃-jacketed steam cavity for efficient heat distribution, while the 316 stainless steel interior liner enhances durability and resists high-acid food products. The hemispherical kettle bottoms optimize heat circulation for uniform cooking. The stainless steel cabinet base is built with a full perimeter angle frame and reinforced counter, supported by 6-inch stainless steel legs with adjustable flanged feet for secure floor mounting.

The Crown Steam GMT-10-6 kettle and cabinet assembly features electronic ignition for reliable startup and an automatic boiler blowdown for improved performance. A double pantry fill faucet with hot and cold controls is included, along with a 5-inch-deep sink with a drain, grates, and a splash guard. It features a steam control valve in the right leg, steam manifolds concealed within the cabinet, a safety relief valve, a steam trap for each kettle, and a split water line. Removable side panels and hinged doors with magnetic catches provide easy access to internal components.
