The bottom of the kettles is hemispherical, enhancing heat circulation for uniform cooking. The cabinet base is constructed of stainless steel, supported by 6-inch stainless steel legs with adjustable flanged feet for secure floor mounting.

The Crown Steam GMT-10-10 kettle assembly includes a steam control valve integrated into the right leg and a Y-strainer for efficient steam operation. The unit is equipped with a double pantry fill faucet, a 5-inch-deep sink with a drain, grates, and a splash guard. Additional safety and performance features include automatic boiler blowdown, an automatic water level control, a pressure gauge, a water gauge glass, an operating pressure control, a safety high-limit pressure control, and a safety relief valve. The electronic ignition system ensures reliable startup, and each kettle is fitted with a lever tilt mechanism that allows them to tilt past 90 degrees for complete emptying. A water treatment system is included to maintain optimal performance.
