Crown Steam DL-100 Description
Because the Crown DL-100 direct steam kettle is made of stainless steel, it is durable and can be wiped clean. Two-thirds of the 100-gallon unit is steam jacketed, and because it uses direct steam, an outside source is needed to fill the jacket with steam. For even heating, the hemispheric design on the bottom of the kettle encourages heat circulation. Its stainless steel liner can handle acidic product, the kettle works great for cooking all kinds of foods. Keeping the product efficient, the spring-assisted, domed stainless steel cover retains heat and steam. This unit is mounted on tubular tri-legs with 4-hole, flanged feet, which can be adjusted and bolted to the floor for stability. Users can drain the kettle's contents with a 2-inch sanitary draw-off valve and use the perforated strainer to prevent clogging.
