A raised pan rail keeps ingredients accessible during prep, while two insulated covers help maintain cold air over the pan section. The 17³⁄₄-inch cutting board spans the full width and is removable for cleaning. Locking casters improve mobility, and polyurethane insulation helps preserve internal temperature stability.

Inside the Valpro VPP71-HC pizza prep table, a 304 stainless steel floor with white ABS sides supports long-term use. Two epoxy-coated wire shelves hold ingredients or boxes, while nine one third size pans organize toppings along the rail. The cabinet includes self-closing doors that remain open past 90 degrees. Polyurethane insulation retains cold air, while the self-contained refrigeration system is factory mounted, requiring no plumbing and simplifying installation in prep kitchens.
