For lasting industrial strength in commercial kitchens, the Middleby Marshall PS638E-1 electric impingement conveyor oven's top, sides, interior, and front are constructed of stainless steel. Its exterior is cool to the touch to reduce the risk of injury and establish a cooler back-of-house environment. It has a 71/10-square-foot baking area and holds temperatures between 325 and 600 degrees Fahrenheit—great for cooking pizzas, flatbreads, and sandwiches. Operators can remove its folding conveyor belt, crumb pans, air fingers, and end panels for thorough cleaning.
To reduce energy consumption automatically, the Middleby Marshall PS638E-1 impingement oven uses a unique Energy Management System, which is equipped with an energy eye sensor to detect when food is in the oven. If the oven is empty, the unit goes into its energy saving mode. Its control compartment is stored behind cabinet doors for easy access while remaining unobtrusive. To optimize cooking, users have full control of its air flow, air movement, time, and temperature settings—offering a 30 percent faster bake time compared to standard conveyor ovens. This single-deck unit measures 651/4 inches wide by 461/4 inches deep by 42 inches high and requires a hood vent for installation.
