The Convotherm C4ET20.20ES combi-oven has three primary cooking modes: hot air, steam, and combi-steam. The hot air setting provides rapid, even heat transfer to the center of products. Dough products, fish, and vegetables are best cooked with the steam setting. The combi-steam mode combines these settings, which provides more flexibility with dishes. Reheating products to ideal serving temperatures is also possible with the retherm setting.
This model has a multi-point core temperature probe that provides an accurate temperature measurement. The Convotherm C4ET20.20ES combi-oven has a five speed, user controlled fan that is consistent even with a full load. The unit has a safety latch that protects users from steam and antibacterial surfaces for optimal food safety.
