The Convotherm C4ET12.20EB combi-oven has a large cooking chamber that is built with 12 shelves. The shelves can accommodate steam table pans, sheet pans, wire racks, frying baskets, and plates where food is held during cooking. The model has three operating modes: hot air, steam, and combi steam. Food can be cooked slowly on a low temperature with the low temperature and Delta-T cooking modes to create tenderness in food.
This combi-oven provides precise temperature and humidity levels. The temperature is monitored by a core temperature probe with an external readout on the control panel. The panel operates with an easyTouch system that keeps all the functions in one easy-to-access location. The Convotherm C4ET12.20EB combi-oven’s control panel has an on-screen help function with topic-based video function.
