The hot air, steam, and combi steam modes provide precise control over temperature and humidity levels, allowing the chef to easily achieve a specific texture and moisture level. There is a retherm setting for reheating food to optimal serving temperatures. Low temperature and Delta-T cooking settings can be used for slow cooking overnight.
This unit is constructed from stainless steel on the interior and exterior for durability and ease of cleaning. The large cooking chamber has 11 slide rails with ample spacing between for full size pans, baskets, and racks.
