The Convotherm C4ET10.10GS half-size broilerless combi oven creates steam by injecting water directly into the cooking chamber, doing away with the need for a broiler and the maintenance requirements that come with it. This combi oven has three main cook settings: steam only, steam/hot air combination, and hot air only. In addition to those modes, four additional specialty settings let cooks dial in precise conditions for specific cooking tasks including traditional and convection baking and high-humidity cooking.
This Convotherm combi oven's controls are accessed with a large, easy-to-use 9-inch touch screen. Up to 399 cooking profiles can be programmed and stored in the oven's memory, and each of those procedures can contain as many as 20 steps. 11 included racks give the Convotherm C4ET10.10GS combi oven a capacity for as many as ten full-size, 1-inch-deep steam table pans. The oven can cook as much as 110 pounds of food in a single batch, with each shelf able to support as many as 33 pounds.
