The Convotherm C4ED6.10GS combi oven has a capacity for up to six full-size steam table pans. Chefs are given the choice between three main cooking modes: steam only, hot air only, and a combination steam and hot air mode that gives this type of oven its name. In addition to those, a number of specialty modes let users achieve precision results, including a Crisp & Tasty mode that removes moisture from crispy fried foods and a BakePro mode that lets the oven be used for traditional baking.
This combi oven's easyDial interface with a digital display gives access to all oven features without the need to navigate a complex menu system. The equipment can be cleaned with a semi-automatic cleaning system. HygienicCare antimicrobial compound is molded into certain components to help fight the growth of bacteria on oven surfaces. The Convotherm C4ED6.10GS is capable of recording HACCP data and information on pasteurization procedures.
