The Convotherm C4ED20.20ES combi oven has three primary cooking modes. The hot air, steam, and combi steam modes allows the operator to control temperature and humidity levels, which provides a variety of cooking possibilities. This large unit provides the space and cooking modes to increase production and expand menus. The oven is programmable with storage for up to 99 nine-step menu items so your items come out consistently.
The unit has a stainless steel construction on the interior and exterior, providing corrosion resistance and durability. The cooking chamber has 20 shelves that can accommodate pans, racks, baskets, and plates. The chamber’s temperature is monitored by a core temperature probe, helping the operator check the internal temperature of food. A five-speed fan circulates air through the large interior of the Convotherm C4ED20.20ES combi oven for even cooking, ensuring food is thoroughly cooked. The temperature, fan, and other oven functions are accessed through the digital control panel.
