Built for quickly assembling sandwiches and salads, the True TSSU-72-18-HC~SPEC3 ADA prep station can be set between 33 and 41 degrees Fahrenheit using the front-facing control panel. Its ecofriendly R290 hydrocarbon refrigerant draws out hot air, and the large fan blades of its evaporator expel it to establish a cool environment. Its system of capillary tubing snakes throughout the unit, delivering a guided airflow design meant to evenly disperse temperatures across the interior. To lock in these cold temperature, it uses a layer of polyurethane insulation. Its evaporator has a motor, which is sealed to self-lubricate it; it's also epoxy coated to reduce the chance of it corrosion. To assess further issues, users can access the condenser in the rear.

For durability, the True TSSU-72-18-HC~SPEC3 ADA prep area features a front, sides, and back are made of stainless steel for simple cleaning and resistance to dents, chips, and scratches. The unit measures 72³/₈ inches wide by 30¹/₈ inches deep by 34 inches tall when measured to the countertop, and it rests on a series of 3-inch castors. Its top features slots for as many as 18 sixth-sized pans of lettuce, mushrooms, tomatoes, and other salad ingredients, and to preserve freshness, it comes with a stainless steel insulated cover that can be lowered when not in use. It also features a polyethylene cutting board, which stretches 11³/₄-inches deep and can be removed when needed. The interior cabinet rests behind three 20-gauge heavy-duty doors, which are opened using the all-metal handles. Each door can be held open automatically for stocking and can be locked shut after use. The interior cabinet is also made of stainless steel, with its floor featuring coved corners that don't trap bacteria. Users can divide the cabinet up using its series of PVC-coated wire shelves, and each shelf can be adjusted in increments of ¹/₂ an inch.
