Refrigerated through an eco-friendly R290 hydrocarbon refrigerant with added support from a layer of polyurethane insulation, the True TSSU-72-15M-B-HC~SPEC3 ADA prepping station is designed to hold a set temperature between 33 and 41 degrees Fahrenheit. This process is further stabilized by its guided airflow system, which, by using its system of capillary tubes that snake across its body, holds the entire unit at a consistent temperature throughout. Its evaporator features large fan blades for added efficiency, and to keep it in top shape, it's wrapped in corrosion-resistant epoxy and sealed in a self-lubricating chamber. This maintenance-focused philosophy extends to its compressor, which is easy to access through the rear of the unit. If operators wish to make quick adjustments, they can do so using its front-facing control panel.

Meant for storing pans of onions, lunch meat, and cheese, the True TSSU-72-15M-B-HC~SPEC3 ADA prep table features both a series of cutouts for storing 15 sixth-sized pans nearby as well as an interior cabinet to hold extra ingredients. Its interior features coved floors for smooth cleaning and a series of shelf racks spaced every ¹/₂ inch, making it simple to adjust one of the six included PVC-coated wire shelves. The doors to the cabinet are made of 20-gauge heavy-duty metal with durable handles designed to survive constant use. These doors can also be held open at a 90-degree angle during stocking and can be locked to prevent tampering after hours. Up top, the unit has an insulated cover meant to be placed over stored ingredients to preserve freshness; it also features a removable polyethylene cutting board measuring 8⁷/₈ inches deep. The front, sides, back, and interior are all made of stainless steel, and the unit measures 72³/₈ inches wide by 34¹/₈ inches deep by 34 inches tall when measured to the countertop. For easy placement, it rests on a series of castors.
