A refrigerated cabinet base in the prep table holds additional ingredients on four shelves that can be adjusted to fit different-sized products and promote complete, even air circulation with a wire design. Constructed of clear-coated aluminum, the interior liner is durable and corrosion resistant. To simplify cleaning, the cabinet floor is made of stainless steel, and coved corners eliminate crevices that trap debris.

Operators can set the temperature to run at any level between 33 and 41 degrees Fahrenheit, and if there is an issue in the system, the service technician can access the slide-out condensing unit at the back.

The condensing coil is kept clean using a reverse condensing fan motor. It blows in reverse for 20 seconds to remove dust and debris each time the compressor starts up. Regular maintenance should be performed alongside this feature to ensure optimal results.
